
I love casseroles during the colder months, especially if they are easy to make and can possibly be made ahead a put in the freezer for future meals or potlucks. Casseroles were always a mainstay for family gatherings when I was growing up whether we were getting together for Sunday dinners, holiday meals, and family reunions. Casseroles were also mainstays of many a potluck at church gatherings or many a Masonic family gathering whether it be the Masons, Eastern Star or one of the Masonic youth Groups (Job’s Daughters, Rainbow for Girls or DeMolay).
Casseroles have a tendency to be easy to make and can serve any where from a family to a large group. They can be light meals or stick to the ribs meal depending on the recipe or season. They can even cover the gamut from vegetarian to vegan to gluten-free to loaded with meat.
