Apple, Peaches Pumpkin Pie, Who’s Not Ready Holler I!

With summer over I am looking forward from eating the lighter vegetarian fare of salads, light soups and broths, and other typical summer foods like corn on the cob, hamburgers and tacos to the heavier foods that autumn brings. I love making hearty stews, casseroles, pasta dishes and even yummy desserts using fresh apple and pears picked fresh from the orchards to winter squash, pumpkins, sweet potatoes, and parsnips.

I happily spent the last two weeks visiting my friend and her family on their farm where they have an orchard full of apple and pear trees and fields filled with a variety of winter squash and pumpkins. After a few days of picking a few bushels of apples and pears, we spent the next several days making apple butter and apple sauce that were canned and placed in the big pantry as well as soups and breads that were placed in the freezer for future meals. Even pears made their way to the table by way of pancakes, scones and even in a yummy bread pudding. At the end of my visit I happily came home loaded down with apples, pears, and a variety of winter squash. And yes I even came home with some of the apple sauce that we made.
