
Serves 2-4
- 1 mini or small seedless watermelon
- 1/2 teaspoon salt
- 2 tablespoons honey
- 1/8 black pepper
Slice the watermelon into 8 or more wedges. Lightly sprinkle the watermelon wedges on both sides with salt. Lay the watermelon (cut-side down) onto a towel or paper towels. Lay another towel or paper towels on top and let sit for 20-30 minutes.
Preheat the grill to high. After the watermelon has released its excess juices, brush the watermelon lightly on both sides with honey. Grill the watermelon over high heat until grill marks form and the melon is lightly softened, about 2 minutes on each side. Remove from the grill and sprinkle with sea salt and a little fresh ground pepper to taste. Serve and enjoy.
